Has anyone any comments on the suitability of countersunk head stainless steel bolts and nuts for fitting repair patches to an Albatross hull (ie floor)? Copper cylinder head gasket? Ford crossflow.

When replacing a cylinder head gasket in a marinised (raw water cooled) Ford 1600 cross flow, should I be looking for a copper based gasket rather than a steel based one?
If so, does anyone know where they are available?
