I think you'll find it varied according to what options were fitted in the factory.
Here's a pic of my Mk II Continental, which has the same dash as the Mk V Sports - L-R: Speedo, Oil, Tach, Fuel; Below: nav & dash light switches, ignition, my later jackplug, dynamo warning lamp.

You'd be likely to use them to get out of the hole quicker, in lieu of trimming the motor, also to level up if loaded off-centre or in a crosswind, and of course to adjust the attitude of the boat (ie, bow up or down) for max speed in flat conditions, or safer running in choppy conditions. To return to the subject...my view on modifications is to avoid whenever possible doing anything to the boat (or whatever) which can't be undone at a later date. So, drilling holes is kind of ruled out, but adding or replacing something within or on the boat is OK provided you can store the original...

Shouldn't they just move with the lever? Could there be air in the system, of maybe soft pipes?
